8 fl oz rolled oats 24 fl oz cornflakes lightly crushed grated zest of 1 lemon 4 oz butter softened 2 fl oz granulated sugar 2 fl oz light corn syrup 2 tsp fresh lemon juice 1 tsp ground ginger |

What to do |
Preheat the oven to 350 F Butter a 11" x 7" baking tray and line with greased proof paper Mix the oats and the cornflakes together in a bowl Stir in the lemon zest In a separate bowl beat the butter, sugar, corn syrup, lemon juice and ginger with an electric mixer until well blended With mixer on low speed, slowly add the dry ingredients. Spoon the mixture onto baking tray pressing down firmly Bake until golden brown (20-25 minutes) Leave to cool before cutting into bars, makes 20-30 bars |
